The Villa at Wrea Green offered a group of students from Saint Aidan's Church of England Technology College, Poulton-le-Fylde, a unique opportunity to cook a three course meal for 130 guests.

Chef Nigel Smith invited 25 Year 11 students, studying Hospitality and Catering at GCSE, to run the restaurant, cooking and serving under his watchful eye. That would have been daunting enough for the 16-year-olds but the biggest test was to have Claire Lara, the first woman to win Master Chef - the Professionals, among the guests.


Other diners included Ranvir Singh, of BBCs North West Tonight, plus parents, staff and governors. The menu started with goats cheese tartlets with a shallot and fennel confit followed breast of chicken stuffed with sun-dried tomatoes and basil. Dessert was a delicious ticky toffee pudding and vanilla parfait. The schools talent was further demonstrated by musical items performed by Saint Aidans students.
