Chargrilled Bacon chop, Artichoke, Truffle dumplings and Mesculin

In the U.S. and Europe, bacon is commonly used as a topping on foods and in the UK we are used to seeing it on a breakfast menu. Many would agree you can’t beat a bacon sandwich but to celebrate International Bacon Day on August 31, head chef at Stanley House’s Grill on the Hill restaurant, Andrew Parker, shares his recipe to showcase its real flavours.

(serves four)

Ingredients

4x Bacon Chops

4x Baby Globe artichokes

Truffle

Mesculin leaf

Truffle dumplings

4x Eggs

120g Butter

5g Sugar

5g Salt

120g Plain Flour

270g Water

Method (Dumplings)

Melt water, sugar, salt and butter add flour and cook out

Remove from pan and allow to cool

Beat the eggs into the mixture slowly until smooth

Leave to set.

Roche’ the mix into salted water and poach till set

Method: (Baby Artichokes)

Break down and peel the artichokes. Simmer in a vegetable nage until tender.

Method: (Bacon chop)

Chargrill the bacon chop until pink, garnish with the truffle dumplings, sliced truffle, place the artichokes around and finish with the mesculin
