How to make the perfect Mulled Cider

There are many recipes for mulled cider, which is ideal for grown-ups at Halloween and Bonfire Night, so ‘tweak’ until you find the perfect one for you.
Ingredients
2 litres of Red Bank cider
6 cloves
3-4 star anise - optional
¼ nutmeg, finely grated into the pan
1 cinnamon stick
1 vanilla pod, halved
Juice of 2 - 3 oranges, mandarins, or clementines
Sugar, white, or soft brown, to taste
Method
Pour the cider into a large pan and warm for a couple of minutes, add the rest of the ingredients, bring to the boil, then reduce to a simmer for about 5 minutes. Pour into mugs, or heat-proof glasses
