Rocky Road Cake Recipe

This is one of those cakes that is guaranteed to raise you several notches in the popularity stakes
125g soft butter
300g dark chocolate
3x15ml tsp golden syrup
200g rich tea biscuits
100g mini marshmallow
Optional embellishments - white chocolate, buttons, smarties,
mini eggs ... you choose
Melt butter, chocolate & syrup in a bowl over a saucepan gently.
Keep 125ml to one side to drizzle on top
Put biscuits in freezer bag and bash with rolling pin aiming for some crumbs and some pieces.
Fold biscuit into remaining chocolate allow to cool slightly before adding marshmallows. Put mixture into a brownie tin lined with parchment
Drizzle remaining chocolate on top.
Pop in fridge and chill for at least 1 hour before adding melted white chocolate and other goodies of your choice.
Refrigerate for at least 2 hours or covered in clingfilm in the fridge overnight.
