Superfoods are foods which are said to have particularly good vitamin content or are high in antioxidants. However, varying all the food you eat is important for a balanced diet. The method here is for a semi-warm salad, but it is equally good served cold.

Ingredients

For the salad:

600g butternut squash, cut into chunks

1 tsp olive oil

200g broccoli, cut into thin strips

100g quinoa

250ml vegetable stock

100g wholewheat pasta

50g soya beans (no need to cook)

60g peas (no need to cook)

30g pomegranate seeds

For the dressing:

2 tbsp lemon juice

1 tbsp date syrup

1 tsp mustard

For the garnish:

1 tbsp chopped parsley

Method

1. Place the butternut squash into the oven with a little oil and roast at 180C for 30 minutes or until cooked.

2. Steam the broccoli for 2 minutes, then refresh it in chilled water. Drain thoroughly. The broccoli should still have a bit of bite to it.

3. Cook the quinoa in the stock for 15 minutes. Once cooked drain off any excess liquid. While the quinoa is cooking, cook the pasta in boiling water for 10 minutes then drain thoroughly.

4. Assemble all of the salad ingredients, topping with the pomegranate seeds.

Mix the dressing and spoon over the salad. Finally, top with the chopped parsley.
