Chef Spencer Burge talks about the philosophy behind Bertram’s Restaurant in the tranquil Woodland Spa near Burnley
Bertram’s is a modern restaurant and cocktail bar located in the heart of rural Lancashire. An eclectic mix of modern and retro makes this a stunning place to enjoy a dining experience offering cocktails until late, music and private dining.
The restaurant can cater for up to 150 making it perfect for many occasions. At night, the restaurant comes alive with an evening cosmopolitan brasserie atmosphere. You can enjoy dinner for 2 in a quiet corner or take a window seat with views across the stunning Lancashire countryside from where the fantastic meat is reared.
The food is very much influenced by promoting local Lancashire produce and the restaurant has just been awarded the highest accolade in the Taste Lancashire Scheme. Carefully selected Lancashire suppliers are used to create the stage for both traditional regional recipes and international dishes. The 35 day dry aged Lancashire beef is out of this world and is delivered seven days a week to ensure the highest quality. It’s a big favourite with customers. At weekends you can sample this supreme beef by trying one of my signature dishes from the specials menu, a whopping 32oz dry aged rib of beef on the bone to share between two. Customers have travelled from as far as Manchester city centre to try the signature dish after being recommended by friends. Bertram’s has fast become one of the most popular restaurants in Lancashire and Spencer believes this is partly due to the fabulous panoramic views the restaurant is blessed with. This, along with the diversity of the restaurant, consistently good food and most important of all listening to customer feedback and acting upon it. Patrons who have sampled our food often request favourite dishes to appear on the menu but we also try to mix it up with new dishes and old favourites using new cooking techniques and ideas. I create the menus with a variety of clientele in mind. A most popular choice from lunching ladies to the health conscious gentlemen this summer are the super food salads where every ingredient is from the top 50 super foods list.
These are complimented by a variety of grilled fish or steak making ingredients like quinoa and bulgur wheat a culinary delight for a healthy appetite. Of course this leaves room for one of our innovative desserts like ‘strawberries and cream with a twist’ or a popular dessert named ‘chocolate and pistachio’ which highlight modern cooking techniques. The Coppice Suite, our private dining Room, can make your event intimate and secluded and can equally cater for larger parties such as weddings or christenings. The innovative menus, sophisticated surroundings and lots of flexibility will ensure your visit will be one to remember.
